When I started blogging I promised not to blog about cooking, although I think I have broken this promise once before. Here are my notes on buying &amp; cooking potatoes.<!--more--><\/p>\n<ol>\n<li>They have a floury &lt;&#8211;&gt; waxy\u00a0 dimension; <a title=\"What is a waxy potato?\" href=\"https:\/\/www.bonappetit.com\/story\/what-is-a-waxy-potato\">this page at bonappetit<\/a>\u00a0\u00a0describes it.<\/li>\n<li>Great British Chefs also have <a href=\"https:\/\/www.greatbritishchefs.com\/features\/potato-variety-guide\">an article on potato type<\/a> selection depending on purpose, they list 17 common potato types.<\/li>\n<li>Serious Eats talks <a href=\"https:\/\/www.seriouseats.com\/recipes\/2014\/06\/shredded-hash-browns-recipe.html\">about making hash brown<\/a>s, which involves according to the author, grating, precooking and extracting the water.
